Recognized as an ambassador of Peruvian gastronomy, he has represented Peru in more than 15 countries across the Americas, Europe, Asia, and Africa.

Trained at Hotel Principe di Savoia in Milan, with a strong background in culinary arts, kitchen operations, and financial management. Extensive experience at Sheraton Lima Hotel & Convention Center leading large-scale operations.

Expert in P&L management, operational excellence, service quality, and high-performance team development, consistently delivering outstanding guest satisfaction and operational results.

Pedro del Rosario

Founder & Food Business Strategist

Food & Beverage strategist with over 25 years of experience in marketing, service management, and gastronomic business development.

Pedro has worked alongside leading hospitality brands such as Sheraton Lima, Meliá Hotels, and Costa del Sol, gaining deep expertise in high-level restaurant and hotel operations.

He has also collaborated closely with world-renowned restaurant Maido and its founder, Mitsuharu Tsumura, from its early stages, gaining firsthand experience in the development of globally recognized culinary brands.

Throughout his career, he has traveled across Peru’s gastronomic regions, working with top Peruvian chefs and participating in the evolution and international positioning of Peruvian cuisine.

Pedro has been actively involved in key industry initiatives, including APEGA and Mistura, contributing to the global expansion and recognition of Peruvian gastronomy.

His unique combination of operational knowledge, marketing expertise, and strategic vision allows him to develop, position, and scale successful food businesses in competitive markets.

Omar Valdez

Hospitality and culinary professional with extensive experience in restaurant and hotel operations, specializing in kitchen management, service quality, and team leadership.

Omar has developed his career in high-level hospitality environments, including Sheraton Lima Hotel & Convention Center, where he held key roles in food service operations, event execution, and customer experience management.

Currently serving as Head Chef at Carma Cucina Moderna, he leads kitchen operations, menu development, and production of Italian cuisine, ensuring efficiency, quality, and consistency.
